Mediterranean Fritatta

I am always searching for something interesting, easy and tasty to cook for breakfast. We used to always have bread and cheese, which is not bad. But it can be a little boring if eaten everyday. I tried cooking Egg and Cheese Omelette which is perfectly fine and tasty. But then, I took it up a notch with the Fritatta.

What is a Fritatta?

A Fritatta is an egg dish that can be cooked on a stovetop or baked in an oven. It can be compared to a Quiche but without a crust. The Fritatta can be filled with various combinations of ingredients. It’s really up to the chef or should I say, it depends on what’s in the fridge. It’s quite easy to make, and can be eaten on its own, like a pie, or a sandwich filling.

Why a Mediterranean Fritatta?

Mediterranean dishes are considered to be healthier than most other diets probably because the ingredients are mostly vegetables that have high nutrients, a variety of cheeses, and of course, extra virgin olive oil. However, if you do not have the same ingredients at home, you can still use the same technique and process to come up with your own fritatta. It’s a very flexible recipe that anyone can make.

Mediterranean Fritatta (serves 3-4)

  • 8 slices of bread
  • 4 eggs
  • 5 to 10 pieces chopped olives
  • Grated cheddar
  • Feta cheese
  • 4 eggs
  • 1 tsp butter
  • 1 small red onion
  • 1 tomato
  • 1 green bell pepper
  • 2 tbsp capers
  • 2 tbsp cooking cream
  • 2 tbsp extra virgin olive oil
  1. Preheat the oven. Set the oven to 180 degrees Celsius for 15 minutes.
  2. While preheating the oven, to save time, you can toast the bread in the oven. Watch out that the bread does not get burnt. A nice light brown (after 8-10minutes in the oven) is sufficient prior to taking the bread out.
  3. While the oven is being preheated and the bread is being toasted, prepare the other ingredients.
  4. Dice the onions, tomato, and bell pepper.
  5. Slice the olives and feta cheese into small pieces.
  6. Heat the olive oil in the pan.
  7. Fry the onions until translucent.
  8. Add the tomatoes followed by the bell pepper, olives, capers and green mustard to the pan.
  9. Once all the vegetables are cooked, set aside.
  10. Wipe a baking pan with butter (so that the fritatta will not stick to the pan).
  11. Spread/Drizzle the cheddar cheese evenly on the pan.
  12. Prepare the egg mixture by cracking 4 eggs into a bowl. Add the cooking cream. Add a pinch of salt, pepper, paprika, and dried thyme. Beat the egg mixture.
  13. Pour the egg mixture into the pan so that it covers the entire surface of the pan.
  14. Add the cooked vegetables to the egg mixture so that it’s evenly spread.
  15. Drizzle the feta cheese all over the egg mixture.
  16. Place the pan into the oven. Cook for 15-20 minutes under 180 degrees Celsius.
  17. Once the egg is cooked and just a little jiggly, slice it into 4.
  18. Serve as a filling for the toast.
